Sometimes we all need a break from eating meat, but we still demand that it's got to be satisfying. Think no further. This Asian style tofu dish will not disappoint you, but rather, it's delicious and cooks in 5 minutes! Trust me you'll love how it tastes and will include it on your weekly menu of easy dishes.
RECIPE for 4-6 servings
2 cups of cubed tofu
3-4 fresh mushrooms, cubed
1 large red bell pepper, cubed
1 cup of roasted peanuts
1 large leek, diced the top white portion
4-5 green onion, diced on a bias
1 bunch of cilantro, chopped
2 large Boston lettuce, separate the leaves
4 tbs of oyster sauce (use vegetarian "oyster"sauce if required
1 tbs of tamarind sauce (mix the tamarind sauce and oyster sauce in a small bowl)
Add a little cooking oil to pan and heat it up. Add in leeks and cook for a couple of minutes, then add in the mushroom, bell pepper and cook until softened, about 5 mins. Then add in the oyster-tamarind sauce. Let it cook with the sauce for another 2 mins. Lastly add the peanuts, green onion and cilantro right before turning off the heat.
Serve the tofu using the lettuce leaves as a wrap. Enjoy!
