How to make two super delicious yet quick appetizers for an Italian dinner party? You just need to make a tomato and mozzarella salad, aka the Caprese salad, and some bread with a great balsamic-olive oil dipping. How I was inspired to make these was many of my mom's friends are vegetarians and they asked me for some non-Asian vegetarian appetizer ideas. You can't go wrong with using fresh ingredients and a nice bottle of red wine to chase it down with.
RECIPE for 4-6 servings
Layer the following in sequence:
4 large red tomatoes, cut into thick slices
1/2 lb of fresh mozzarella cheese, cut into thick slices
1 handful of fresh sweet basil leaves, whole leaf
Fresh ground black pepper
Combine the below for Bread Dipping:
4 tbs extra virgin olive oil
1 tbs of fresh minced garlic
2 big pinch of dried red chili pepper flakes
3 tbs of aged balsamic vinegar
1/2 tsp of crispy fried shallot
2 big pinch of dried herbs de provence
Some crusty bread/baguette or Italian, cut into large pieces
Top the tomato/caprese salad with balsamic vinegar and fresh ground pepper.
