Basmati Rice with Cashew and Raisins (Com Hat Dieu)

I'm Asian, so rice is a big part of my daily routine. So ever since I discovered the rice cooker can turn out perfectly cooked basmatic rice, I'm hooked. Here is a wonderful and vegetarian-friendly, rice dish that will blow you away. Not only is it super easy to make on a weeknight but also so elegant and delicious for a gathering among family and friends. Check it out the recipe and video!

RECIPE for 4 servings

3 cups of basmati rice, do 6-7 rinses until water runs clear, and cook as directed on package using a rice cooker
1 cup of roasted cashew
1 cup of yellow raisins
1 bunch of cilantro, chopped
1 handful of crispy shallots
1-2 cloves of garlic, minced
1/2 white onion, diced
1 tbs of tumeric powder
2 tbs of butter
Salt to taste

After rinsing the rice, add about 1.5 cups of water to each cup of rice. Then add in butter, 1/2 tsp of salt, and tumeric powder. Turn on the rice cooker. It should cook for about 17-20 mins.

Now for the toppings. Add a little olive oil to pan and add in onion and garlic to saute them for 5-7 mins or so, until slightly golden. Add in raisins and toasted cashew. Saute for another 3-4 mins and set aside.

Once rice is cooked, transfer rice to a large platter. Top the rice with the sauteed raisin cashew mix. Garnish with the cilantro and crispy shallot. Serve immediately.
