Vietnamese love to add "tep mo" or "fried pork belly fat" to add that crunch factor to many of the cool salad dishes, and to warm dishes too. However pure pork fat doesn't really help with the high-cholesterol-prone genes of many Vietnamese, therefore there must be an alternative. And so you have these croutons, basically fried bread cubes. It's super easy to make and they are just delish. Check it out in the below and there's a video as well.
RECIPE for 3 cups
3 cups of day-old baguette, cubed
5-6 tbs of olive oil
Salt and pepper to taste
Heat up oil in frying pan. Drop in the bread and fry on med-high heat for 4-5 mins, or until the bread turns golden. Remove from pan and let cool for 5 mins before serving.
