Sometimes we just crave for noodles for lunch or dinner. So here's one with egg noodle that's sure to satisfy any hunger and it's one of my favorites. Inspired by the Dan Dan noodle, however I'm crossing into the Thai border and use one of Thailand's most favorite seasoning, the Thai chili oil. Add this sauce to any ground meat such as chicken, as I have here, and it's healthy too. Enjoy!
RECIPE for 4 servings
4 bundles of fresh egg noodles, cook according to package
1/2 lb of ground chicken
2 tbs of minced garlic
2 large tbs of Thai chili oil sauce
1-2 tbs of fish sauce
1 handful of mints
2 persian cucumbers, jullienned
2-4 tbs of Taiwanese chili sauce for topping
Saute some garlic and then add in the Thai chili paste for a couple of minutes. Add the ground chicken. Break it up with a spatula and cook for 7-8 minutes until the meat is cooked. Add in the fish sauce to taste.
Place the cooked noodle in a large bowl and top with all the veggies and cooked meat.
Enjoy right away with some Taiwanese crunchy chili oil!
