I love Peking duck and I love pizza. So I'm combining my two favs into one slice! It's really a semi-homemade as most of the items are bought and then assembled. I don't even have a pizza stone and it still comes out delicious and fancy. So the most time you'll have to spend is time getting the Chinese BBQ duck or Peking duck from your local Chinese BBQ place and a stop at your supermarket to grab a ready-to-bake pizza dough and mozzarella cheese. Give it a try next time you're having some friends over. Just surprise them with Peking Duck flatbread and you'll be a rock star!
RECIPE for 2-3 servings
1/2 a Chinese BBQ duck or Peking duck, cut into bite-size pieces (save the other half for the BBQ duck and egg noodle, recipe to come!)
1 Pillsbury pizza dough, or your own pizza dough
1 cup of fresh shredded mozzarella
3-4 spring green onions, top 4-inch section only, shredded
1 small Japanese cucumbers or similar, sliced thin into .5x3-inch strips
2 tbs of olive oil
3 tbs of hoisin sauce
1 tbs of water
Siracha, as condiment
1. Combine the hoisin sauce with water and oil. Set aside.
2. Roll out the dough on your pizza stone or pizza pan. Bake the dough according the instructions on your package. Or similarly, place the dough on a pizza pan and bake for about 6-7 mins at 425 degrees, using the middle rack, until it's about to be slightly golden. Then remove the bread.
3. Using a basting brush or any for-food brushes, and brush the flatbread with the hoisin sauce mixture. Then top with the cheese, then the duck and then cucumber and onion.
4. Put flatbread back to the oven, using the rack near the top. Set the over to broil for 3-4 mins or until the toppings are very slightly charred. (Broil heat is about 500 degrees)
