Fried rice is one of those dishes that can include pretty much any ingredient you like, want, or have in your refrigerator or pantry. Today, I'm making mine with one of my favorite kind of eggs, the smelt egg or better known in the sushi world as masago. It tastes out of this world and its color is just spectacular. And the best part is, it's so easy to pull together for any meal of the week.
RECIPE for 4 servings
1 cup of masago (smelt eggs)
1/2 lb of large shrimp, shelled and cut into thirds, season with 1 tbs of fish sauce
1 handful of chopped chives, upper half part only
1/2 white onion, thinly sliced, soak in cold water and drain dry
3-4 garlic, minced
4-5 cups of cooked jasmine rice
Fish sauce to taste

Add 2 tbs of cooking oil to hot pan and add in garlic. Then add in shrimp and cook for 3-4 mins until opague and pink. Remove from pan and set aside. Add the rice to pan, and add a little oil if needed, and fry for a few minutes to warm up the rice. The drop in the fish eggs and toss well so the rice and eggs are well distributed. Be careful with the toss to not squish the eggs too much. Lastly, add shrimp then onion and chives to the rice. Toss a few times and turn off the heat. Serve immediately with a side of premium fish sauce to add to the rice if desired.
Add back the shrimp to the rice and toss in the chives.
