Oven Braised Catfish (Ca Kho To)

I've been really good about serving more fish dishes. Good thing is, our family loves fish anyways so it's real easy to decide what to cook for dinner. So my next challenge to myself is how to make a great fish entree under 30 minutes. And here you have it, my express style to the famous Vietnamese fish in clay pot, however, there's no clay pot and I let the oven do the cooking. Enjoy!

RECIPE for 6 servings  [watch the video]

4-5 lb catfish, cleaned and cut into 1-inch steaks
1 can of coco soda (12 oz)
1/3 cup of fish sauce
1 tbs of cooking oil
1 tsp paprika
1 tsp fresh ground black pepper
1 tbs garlic powder
2 tbs light brown sugar
1 tsp caramel sauce (or dark thick soy sauce)

Use an oven-safe saute pan and place the fish steaks in one layer, as seen in the photos above.
Add in coco soda. 
Add in fish sauce.
Add in the rest of the dry ingredients, in a circular motion, as seen in the photo.
As for the caramel sauce, add 1/2 a tsp in the circular motion on top of fish pieces. For the other 1/2 tsp, add that to the liquid portion.

Set oven to Bake for 435 degrees for 25 minutes. No lid needed.
Set oven to Broil (or 500 degrees) for the last 5 minutes.
Let it rest for 10 minutes before serving with steamed rice.
