Soy sauce is widely used in Vietnamese meals, but probably just about 5-10% less than the fish sauce. For most Vietnamese families, their pantry will have a big bottle of soy sauce for every two smaller bottles of fish sauce. Chances are, kids start out with soy sauce first then graduate to fish sauce. So here I have my family's recipe for soy sauce mix that goes with everything, pretty much, just put some soy sauce on it and it's all good. Skip the spicy peppers for the kiddos, as well as for some adults who have no tolerance for spiciness. It's a must with most Vietnamese vegetarian meals. Give it a try on your rice or noodle dish and you'll be so pleasantly surprised!
RECIPE for 1-2 servings.
3 tbs of soy sauce
1 tsp lemon or lime juice
1/2 tsp of sugar
1-2 fresh chili pepper, easiest to cut them with scissors, seeds included
Stir well to dissolve the sugar.
Drizzle on your fried rice, noodles or steamed rice.
