Tomato Fried Rice (Com Chien Sot Ca)

This has got to be the most simple fried rice recipe there is. It looks and tastes great as it goes well with everything, from being a entrée or a side dish. Its beauty is how simple and fast it is to cook up when you don't really have much in the pantry. Just throw a fried egg on top and it's a meal. You must make this dish tomorrow and taste how delicious it is!

RECIPE for 2 servings

3 cups of cooked jasmine rice
8 oz of tomato sauce
3-4 cloves of garlic, minced
1 tsp sugar
1 tbs of fish sauce
2 tbs of soy sauce
salt and pepper to taste
cooking oil
1 fried egg, sunny side up

Add oil to hot wok. Add in the garlic and fry it for a few seconds. Add in the tomato sauce. Cook for a few seconds. Add in the rice. Separate the rice well with spatula.

Turn heat down to med-hi. Add soy sauce and a pinch of salt, sugar and pepper.  Stir and fry rice well. Add 1 tbs of fish sauce at the end. Make sure the fried rice is all separated and nicely orange.
