Our family has so much to be thankful for during this Thanksgiving holiday season. For us Vietnamese Americans, Thanksgiving is a huge celebration as we give thanks to our adopted homeland, the greatest country in the world called The United States of America. As for food, having turkey at the table is a must, but sometimes we want a Vietnamese-Asian twist to the turkey. So here is my recipe for a delicious turkey that will sure have you craving for turkey everyday of the Thanksgiving week! Yes, everyday, with rice, banh mi, dry noodles, or even noodle soups. My take on this is taking the best parts of the turkey, the wings and legs and marinade them with lots of garlic and a few "brown sauces" to let them soak in all that flavor. My sauce combo of hoisin, oyster and soy is key to having a brown and golden color to the turkey, and not to mention the awesome crunch on the skin. Yum! Within an hour or so roasting in the oven, you will get to enjoy some delicious turkey without any stress. I love it when I can serve a holiday entree that's fast and delicious, don't you? RECIPE for 4 servings
2 turkey wings, cut them at the joints
2 turkey legs, score them on the bottom side to quicken the marinade process
4 tbs oyster sauce
4 tbs soy sauce
2 tbs hoisin sauce
1/2 tsp black pepper
2 tbs minced garlic
1/2 tsp sugar
6 tsp of unsalted butter, room temperature soft
Preheat oven to 375.
Combine all the ingredients in a large bowl and marinade the turkey for 10-15 mins.
Place turkey pieces in one layer in roasting pan. Spread the butter to the top surfaces of the turkey pieces. Then add 1/2 cup of water to the marinading bowl, swirl it around to get all the garlic pieces and pour that to the sides of the roasting pan, adding moisture to our roasting process.
Place pan on the middle oven rack and roast for 45 mins.
Serve along side with your favorite Thanksgiving sides.
