Fried rice is the "go-to" dish for most Vietnamese as it can be served for breakfast, lunch, dinner, or as a snack! Yes, it's that versatile of a dish, so the range of ingredients are unlimited. With that in mind, there's a trend lately to include some "not-so-Vietnamese" ingredients to fried rice, such as the case here with the bright orange smelt egg, aka masago. We often see masago with sushi pieces, but here is a wonderful play of masago in a fried rice. Enjoy!
RECIPE for 4 servings
3 cups cooked jasmine rice, let cool
1/3 cup of masago, aka smelt eggs
2 links of Chinese sweet sausage, sliced into thin rounds (optional)
2 eggs, scrambled, fried and rough chopped
1/2 of an orange bell pepper, diced small
1/2 small white onion, diced small
3-4 garlic, minced
1 handful of basil
3-4 stalks of scallion, diced, use both white and green part
2 tbs of premium fish sauce
2 tbs of cooking oil
Heat up wok on high. Add 2 tbs oil to wok and add in sausage. Let it render for 2-3 mins. Then lower heat to med-hi and add onion and garlic. Fry for 2-3 mins. Then add in bell pepper and continue to cook for about 1 min.
Add rice to wok and mix the rice around well, then add in 2 tbs of fish sauce and toss well to incorporate all flavors. Make sure the rice is lump-free. Stir fry for 4-5 mins so the rice is hot, loose and slightly shiny from the oil. Lastly, add in masago, green onions, basil and eggs. Give it a few tosses to distribute the ingredients evenly. Turn off heat, but continue to toss the fried rice a few more times. That heat will cook down the green onions and basil. pepper.
Serve immediately on a large platter.
