This dish is one of the best chicken dishes for a weeknight meal. Often we buy a tray of chicken pieces, so this recipe is a perfect way to cook them up. Just remember to marinade them overnight and you're sure to have a plateful of seriously-good-finger-licking pieces of roasted chicken, ever! The soy sauce and garlic will sure to bring a beautiful golden color and aroma to the chicken. RECIPE for 4 servings
3 lbs of chicken, white or dark meat pieces with skin and bone, score a couple of times on the skin side
1/3 cup of soy sauce
2 tbs of sugar
1 tsp of salt
1 tsp of fresh ground black pepper
2 tbs of minced garlic
1/2 small white onion, sliced thin lengthwise
Mix all the ingredients well in a bowl first. Marinade the chicken overnight in the fridge.
Take chicken out from fridge and let it rest at room temperature for 20 mins.
Place chicken pieces with skin side up on baking sheet. (Line tray with foil for easy clean up)
Drizzle all of marinade sauce over the chicken. The high heat will cook down that sauce.
Set oven to roast at 400 degrees for 20 minutes.
Let it rest for 5 mins before serving. Enjoy!
