Braised-Roasted Pork Belly (Heo Quay Kho)

It's about dinner time on a Thursday and I'm still stuck in traffic. Hello and welcome to Houston! So what to do for dinner? One option is to stop by the local Asian supermarket with a stall of freshly roasted Chinese BBQ and grab some to-go. Yes! The number one selling item is roasted pork and get a pound or two of the pork belly and you're on your way to a delicious meal within 30 minutes. While you're at the market, grab some eggs too. You'll see why in a few lines below. Here's my quick and easy coconut soda braised roasted pork belly that will make you the star at the dinner table, even if you had just 30 minutes to get food on the table.

RECIPE for 4-6 servings

2 lbs of Chinese roasted pork belly, cut into chunks (usually the BBQ man does that for you)
2 cans of coco soda
3 tbs of premium fish sauce
3 large fresh garlic cloves, smashed
2 tbs of honey
1/4 tsp of fresh ground black pepper
4 large eggs, semi-soft boiled,  remove shell

In a sauce pan, add all the ingredients except for the eggs.
Cook on medium-high heat for 15 minutes. Then add the eggs in for the last 10 minutes, on medium-low heat for a total of 25 mins of cooking time.

Serve with plenty of steamed rice and a side of steamed leafy greens.
